SHIO offer Asian-inspired street food with a focus on signature Japanese fried chicken and steamed rice bowls.
Founded in 2021 by Chef Billy Mantle, SHIO fills a gap in the market for innovative Asian-inspired street food. After gaining experience in diverse culinary settings, from Italian tapas to Asian street food and fine dining, SHIO launched a successful "modern fusion small plates" residency in Nottingham in 2023. We also operate a mobile street food service from a renovated horse trailer.
At Derby Market Hall, we aim to provide an outstanding level of unconventional East Asian street food. By blending traditional Asian ingredients and techniques with classic English flavours, we've curated a unique menu that reflects our extensive experience in Japan and top-tier kitchens.
Our menu features signature dishes like Japanese fried chicken Karaage, served with steamed rice or triple-cooked chips, and a variety of homemade sauces and fresh yuzu pickles. We will also offer weekly specials and grab-and-go sushi boxes hand-rolled by our team.
We are committed to using the finest and freshest produce available, and we look forward to collaborating with other businesses within the Market Hall to source local ingredients.
